Lime for Beef Lemon for Fowl

Lime Chicken infused with garlicky, savoury lime flavours! The fob to getting depth of flavour in a simple lime marinade is to use soy sauce for saltiness, plus a touch on of carbohydrate for great caramelisation.

Fabulous for a quick wednesday meal and ESPECIALLY corking for the BBQ! Bonus: super salubrious at less than 300 calories for a whole chicken breast.

Lime Chicken

If y'all love lime flavour – and I'1000 yet to come across anyone who doesn't – this Lime Chicken has your name written all over it.

It's juicy. It's caramelised. And information technology truly tastes of lime.(gasp shock horror!)

(PS The key is to use lime ZEST. That's where most of the lime flavour is 👌🏻)

Grill it. Pan fry it. You can even Broil it!

Lime Marinade for Craven

The fob with fresh citrus based marinades is getting depth of flavour into it. If y'all merely apply lime juice, salt and garlic, the flavour is quite flat and the chicken – especially if using chicken chest – will lack something (because breast has virtually no fat, and fatty = flavor).

So I add a fleck of sugar and olive oil (so the chicken caramelises when cooked), utilize soy or fish sauce for the salt (adds complexity but doesn't gustation fishy OR Asiany!) and throw in chopped cilantro / coriander for another layer of flavour!

Actually, this marinade is based on Vietnamese marinades, like the one I use in my Vietnamese Chicken Noodle Bowl and Vietnamese LemongrassPork Cutlet. The Vietnameseknow their marinades, that's for sure!!

But this one doesn't taste Asian. 🙂

How long to marinade chicken

For this Lime Marinade, craven is all-time marinated for 12 to 24 hours.It volition make the outside a touch white because the amount of lime juice in this marinade "cooks" the chicken a scrap (remember ceviche).

Simply information technology doesn't take it and then far that the craven starts to pause down so don't be alarmed. In fact, this marinade is fine for 48 hours, though I wouldn't take information technology further than that.

TIP:I similar to prepare freezer bags of the chicken in marinade then immediately pop it in the freezer. Then the night before, put information technology in the fridge and let information technology defrost for 24 hours, during which time information technology will marinate.

What to serve with Lime Craven

The Lime Marinade makes the chicken juicy on the inside and injects with season so you won't demand a sauce with information technology. And subsequently resting the chicken for a few minutes before serving it, some of those juices will sweat to the surface, like y'all see beneath.

As for what to serve on the side, hither are a few suggestions!

  • Lime Kokosnoot Rice (pictured beneath) – lime overload?? Nope! Lime tastes different when cooked with the chicken vs in a coconut rice. 😇

  • Keeping with the healthytheme, serve this with Creamy Mashed Cauliflower

  • Mushroom Rice – because this goes with everything!

  • Lemon Spud Salad (bright lemon flavours!) – or everybody's favourite creamy Salary Tater Salad

  • Sugariness/savoury Fondant Sweetness Potato for contrast against the citrusy chicken

  • Super Quick Couscous Salad – great emergency side with leftovers for tiffin!

  • Leafy greens with French Dressing or Balsamic Dressing

  • Warm crusty rolls slathered with butter, Garlic Breadstuff or Quick Cheesy Garlic Staff of life

Recipe video higher up. This lime marinade has a beautiful depth of flavour and really infuses the chicken with lime flavours! Touch of sugar caramelises the craven, and depth of flavour is achieved by using soy or fish sauce instead of table salt (it doesn't taste Asiany at all, I swear!). Stove or BBQ all-time, but can also broil!

Chicken Marinade

  • 600-750g / ane.2 - 1.v lb chicken breasts (4 pieces) or boneless thigh (Annotation 1)
  • Zest of one lime (zest earlier juicing)
  • 4 tbsp lime juice (one - 2 limes)
  • ii garlic cloves , minced
  • iii tbsp chocolate-brown sugar
  • ane/iv tsp pepper
  • 1 tbsp olive oil
  • 2 tbsp finely chopped cilantro/coriander (optional)
  • ane tbsp fish sauce (OR 2 tbsp soy sauce) (Note 2)

To Cook

  • 1 - 2 tbsp olive oil
  • Utilize fist (or rolling pin!) to pound fat end of chicken breast to most 1.7 cm / 2/3" thickness (not required for thigh).

  • Place chicken and Marinade in a ziplock bag, massage to distribute marinade evenly. Place on a plate or bowl and refrigerate for 24 hours (min 12 hrs, max 48 hrs - Notation 3)

  • Remove chicken, discard Marinade. Cook using one method beneath.

To Cook (cooked internal temp 165F/75C)

  • STOVE:Oestrus oil in a large skillet over medium high heat. Cook craven for 3 minutes on each side or until caramelised and golden brownish (see video!).

  • BBQ: Castor grills with oil and estrus to medium loftier (or medium if your BBQ is strong). Cook chicken for 3 minutes on each side until caramelised (come across video!).

  • OVEN: Preheat oven to 425F/220C. Bake 15 minutes, then flick broiler/grill on high and grill for 3 minutes to caramelise surface & terminate cooking.

Rest and Serve:

  • Transfer chicken to a serving plate, cover loosely with foil and rest for 3 minutes.

  • Garnish with actress coriander/cilantro, lime wedges and chilli if desired, then serve!

1. Chicken - chicken breast pictured in post. Marinade is especially great for breast because it adds juiciness and caramelises the surface. Besides terrific with boneless thigh, and any other cut of os in peel on chicken, but run across notes for adapted cook times and methods.

ii. Fish sauce is improve than soy because it has deeper, more complex flavours. Adds depth of flavour to this otherwise simple marinade, but does NOT go far gustatory modality fishy!

Sub with soy - simply use more (1.5 tbsp) because soy doesn't have as circuitous flavours as fish sauce. Soy - use light or all purpose, practice not use dark soy (too strong)

iii. Marinating time - Lime juice will make the surface of pare white with 24 60 minutes marinating fourth dimension merely information technology won't break downward the surface. 12 hours minimum to really go the lime flavour into the chicken. 48 hrs is the max marinating time - after this, chicken will start to break down.

Prepare ahead, identify the chicken and marinade in a ziplock bag in the freezer straight abroad, then defrost in the fridge overnight, during which time the craven volition marinate.
